The processing area is divided into many sections such as deheading and peeling , sizing , weighing , arranging , cooking , value added processing , freezing and packing.

Several types of freezers are used in the production process. They include contact plate freezers , tunnel IQF freezers , spiral freezers , blast freezers and liquid carbonic freezers.
